Merry Christmas and Cooking a Bird . . .

Merry Christmas to one and to all.  Hope each of you get to spend time with those you love and cheerish.  Wow, it's been a year since I communicated with most of you.  Hope during this absence you've had a great time.  There's been a couple of you I haven't been in contact with  .  .  .  yet, just give me time. 

Since last year I've added a new member to my family, Peggy, a rescue dog, ugly and ahhhhh so cute.  Just discovered she likes the Christmas song I'm sharing.  As I gave the video a test run she laid there, eyes looking up at me, a smile on her face, and her tail was just a thumping. 

Caught in the holiday mode.  Told my girlfriend that this year I will do all the cooking (she always helps).  She'll be coming in late tomorrow so I've planned a light evening meal.  Roast, beats in cream, and green beans with their own light cream sauce.  Then Christmas Day for breakfast blueberry muffins (with a few walnuts) and hot cona coffee.  We don't care for all the left over turkey and seldom do we eat any ham  .  .  .  so I'm trying a new southwestern dish - hot and spicy chicken, baked between onion wedges, it will be wonderful.  Still not sure on the various side dishes, but there will be green beans (fresh), spiced with salt, paper, garlic, added almonds (the almonds will be roasted), and perhapes simmered in coconut oil.  For desert I will be using an old family recipe for date pudding (this pudding will knock your socks off).  Am still open for suggestions on side dishes.

Hope you enjoy the video.  The Pretenders have always been a favorite.

I want the date recipe pronto and we would all like to see a photo of Peggy sometime.

How about you bake some potatos and add cheese to them after they are done. You could also roast some carrots with that chicken.

Merry Christams GM, that was a great pick with Chrissie, she got a great voice.

Dog, bet you come through for many people on and off the vine. Haven't made up my mine on baked or mashed potatos. The roast carrots is a diffinate, yes.

Believe most haven't seen this video, was only posted a few days ago. Again, Merry Christmas, and thanks!

I cook my carrots in a little butter and brown sugar. Mmmm. Garlic mashed potatoes with the skin on sounds delish, too.

Haven't made up my mind on the potato, baked or mashed. If I go with the mashed, I'll go with the garlic (with skins). Love them that way. I'ts a long story why she was named "Peggy," but she loves her name!

Hi Gray - Merry Christmas and Happy New Year to you and your family. My boys made it home and I have been lost in them.

What a wonderful article and congrats on Peggy, I'll bet she is happy. I'm sorry I didn't get by on time. I see there are some other goodies I should look at as well, the geode caught my eye on the way in. You have every right to give me a poke now and then, just contact me with NV or come and yell on a comment Okay?

That is a wonderful video, Chrissie has such a distinct, beautiful voice. Thanks for sharing :o)
